{#BEDM} Cinco De Mayo

It seems there's a lot of history behind 'Cinco De Mayo'...

Spanish for "fifth of May". It is celebrated in the United States and in Mexico, where the holiday is called El Día de la Batalla de Puebla (The Day of the Battle of Puebla).

It originated with Mexican-American communities in the American West as a way to commemorate the cause of freedom and democracy during the first years of the American Civil War, and today the date is observed in the United States as a celebration of Mexican heritage and pride. (Source Wikipedia)


Chilli Nachos

Today I'll be celebrating with a feast of Chilli Nachos for dinner, it is one of my favourite meals. Here's how I make mine:

Ingredients
lean minced beef
beef melting stock cube
onion
peppers
garlic
mixed herbs
tomato puree
mild chilli powder
worcester sauce
tin of kidney beans or mixed beans
tin of chopped tomatoes
a carton of passatta

Method
brown the minced beef with a little water, once brown drain off all excess liquid. Add garlic {2 cloves if fresh or a good sprinkling of dried garlic granules or some garlic puree}, mixed herbs and mild chilli powder {to taste}, mix to combine. Add the beef melting stock cube {love these, they are so tasty}, worcester sauce and tomato puree. mix to combine. Add onion and peppers {you can also add celery, mushrooms.. whatever you fancy}. Cook for a few minutes to combine all the flavours then add in the tin of chopped tomatoes, passatta and the beans.  Stir until all combined.

I cook mine in a big pot and let it cook slowly for a few hours stirring every 20mins or so.  OR, you can toss it all in a slow cooker and leave it to cook all day whilst you're out.

{I don't season mine with salt until it's cooked then I decide if it needs salt or more chilli... we could all do with less salt in our life right? Plus the nachos are salty enough}

Serve
Serve over nachos, sprinkle with grated cheese and if you like add some salsa, guacamole and sour cream {or natural yoghurt}

Meal Planning {Monday}


 Meal Planning Monday

Hello! Here's to the first meal plan of the year... incorporating number 1, 2, 4 and 6 of my 14 goals of twenty14 I've got some new recipes to try out and some below that I've already tried {yum!}

This week we're planning to eat:

Monday - slow cooker meatballs with spaghetti {homemade meatballs made from turkey mince}

Tuesday - chicken tikka, riata and rice {using this Schwartz packet}

Wednesday - roasted veg pasta and garlic bread {homemade sauce}

Thursday - lamb leg steaks and veg stir fry rice

Friday - chilli, wedges and cheese

Saturday - slow cooker ham with mash and veg

Last week we tried some new things, which were all very tasty!

I had some mozzarella that needed used up {I hate waste} and some limp peppers in the fridge... I roasted the peppers with some spray oil and herbs and layered them with lasagne sheets, a carton of Sainsbury chopped tomatoes with basil and chilli and the mozzarella.. baked for 20mins. Such a filling dish, I'll be making this again.

Roasted Veg and Chicken

I had a whole cauliflower to use up and one of those limp peppers so I chopped them up along with a carrot, added two cloves of garlic and sprinkle of herbs and roasted for an hour. Topped with a chicken breast and a splash of Nandos medium sauce {still a bit spicy for me}. The roasted cauliflower was a nice change, didn't really taste like cauliflower which was strange but nice.

We had these yesterday... amazing! I had a huge pack of turkey mince in the freezer which I had no idea what to do with {I picked it up at supermarket and was reduced to 10p from £3.50}. I defrosted the mince and added some frozen onion and mixed herbs, shaped the mixture into burgers and gave a quick fry in the griddle pan {with spray oil} to seal. I then covered them with foil and baked in oven for 15 mins. The fries were home fries and when cooked I sprinkled with Nandos piri piri chip sprinkle {Yeah I got a little Nandos gift set from a colleague, love it}. I served the burgers with melted cheese, mayo and salad.. on a roll. Everyone loved them and they were so juicy and simple to make. I'm using the other half of the turkey mince for today's meatballs. Two hearty meals for 10p! Can't beat that!

Healthy Lunches

It's Monday {as you know}, so that means the diet starts healthy eating starts, so I'm going to try and pack a healthy lunch each working day. The one above was from Friday - ham salad with raisins and grapes, it was so tasty and I used the leaves as wraps! Today I have king prawn salad and I made my own thousand island sauce {Will let you know if it's a hit!}

Meal Planning {Monday}



So I planned my meals well in advance last week but that's now changed as I have a few meals out this week {yipee}. Yesterday I made some scrummy minestrone soup and some mac 'n' cheese with garlic bread it was all very tasty indeed!

The rest of the week looks like this:

{meal} Planning



Oh dear, two blog posts on the same day.  To me it's a sin nearly as bad as a DJ playing the same song twice at any gig {Husband used to be a DJ, trust me it's a cardinal sin}. But... in my defence if you have read my previous post you'll see I'm catching up from the weekend as I was a social butterfly then!


I'm rushing with this week's meal planning and using up as much of the groceries I have at home, and I have a fridge full of veg {which is getting roasted tonight}, there might even be some soup made mid week if there's still lots left.

Monday - roasted veg pastry parcels with herb rice
Tuesday - spicy cheeseburgers
Wednesday - chicken kiev and cheesey potato wedges
Thursday - something quick 
Friday - twice baked potatoes, filling tbc
Saturday - lasagne
Sunday - will decide at the weekend

Goat's Cheese and Sun Dried Tomato

Tonight this happened...

Goat's Cheese and Sun Dried Tomato Pastry

...oh and it was lush! I'm not the biggest fan of Goat's Cheese (but Hubber loves it) but I can enjoy it if it's with something else that's quite flavoursome. I'm trying to add new things to my weekly meal plan as I'm constantly repeating the same meals, which is getting boring.

How it happened...

{I used} ready rolled light puff pastry sheets and placed {about} half the pack onto a baking sheet {that had greaseproof paper on it}

In a bowl I mixed:  1 tablespoon of BBQ sauce {ketchup}, 1 teaspoon of garlic puree and 1 teaspoon of tomato puree. Mix then spread this thinly over the pastry sheet.

Crumble Goat's Cheese over the top and add sundried tomatoes {I bought the jar and used about a third}. I grated some cheddar over the top {just a little}.

Bake in oven at 180 for 15mins. 

This alone would be ideal for a lunch or serve with a tasty salad for dinner... YUMMY!

{Bank Holiday} Monday Meal Planning



It's all back to normality from tomorrow {after our holiday / week off}, but I am thankful for the extra day the Bank Holiday has given {even though the weather here was rubbish}. Our plans of having a day away didn't come to much but we did eat out at Wagamama for lunch - I do love duck gyoza!

On the subject of food, here is this week's Meal Planning Monday:

Monday - we ate out for lunch so it was tea and cake for dinner

Tuesday - veg pastries, baked potato, salad and 'The Slaw'

Wednesday - cod and chips {for them, as I'm out with a friend for dinner}

I'm Smitten


Oh I'm always so late with my Smitten Saturday post, I must try and get more organised! But here I am / It is... I'm linking up with Glasgow Mummy, have you seen her Smitten Saturday post yet, such good news in there!

Last week I was Smitten with teapigs Macha Tea, still contemplating buying some more! This week I am Smitten with the Mediterranean veg Pastry Ring Recipe I (or should I say we) LOVE IT! Best of all it's so simple, I'll not repost the whole recipe, you can click here to read it from a previous post. This time I didn't have aubergine or leek but I did add celery and my Philadelphia was just the plain one but I added a little chilli flakes.  It's such an adaptable recipe AND I first saw it on Glasgow Mummy's blog!

The Slaw {homemade coleslaw}

Happy Easter to you all!

It's been a very busy day in AnneeApple land but lots of fun too.  Hubber is working night shifts this weekend, so as he came home it was time for us to get up.  Baby, big girl and I made some Easter Baskets this morning... some sewing with ribbon and lots of stickers in preparation for our Easter Egg hunt later on, which was lots of fun!

Whilst baby napped I prepared dinner... I didn't do the traditional Easter Sunday Roast as it's big girl's 19th Birthday tomorrow and she wants to go to The Carvery for dinner.  I bought in some quiche {not had quiche in so long} and made my homemade 'The Slaw' and rustic wedges with roast onion and cheese {posh for chip n cheese}... here's the recipes:

The Slaw

This is so simple and once you make homemade you'll not buy shop bought again... {this served 5 as a side portion and there is still a little left}

3 carrots
1 red onion
1/4 of {the above} white cabbage
250ml mayo {I use Tesco or Asda Lighter than Light}
Sprinkle of mixed dried herbs
Splash of malt vinegar
Pinch of salt
Pinch of sugar

I use my vegetable peeler to peel the carrots into very thin ribbons, cut the red onion and cabbage into very thin strips.  Into a tub {one with a lid} put the mayo, big splash of malt vinegar, herbs, salt and sugar and stir until combined.  Toss in the veg and stir {If you need to add more mayo that's fine, just add until it's the right consistency... if it's too wet just add more veg}.  Put the lid on and give it a good shake.

This is best left in the fridge over night but if you're not that prepared {like me today} then leaving it a few hours is fine too.  Let me know if you make this and how you get on, I love it and I'm keen to know what others think of it.


Rustic Potato and Roast Onion Wedges with Cheese

We all like chips right?  This is a posh{er} version.

Chop the potatoes and a white onion into wedge chunks and put in an oven tray, drizzle with some sunflower oil and sprinkle with some dried Rosemary.  Cook in oven for 40mins {turning half way through}... for the last 5mins of cooking add grated cheese over the top {as much as you like for your own taste}... Mmmm loved these, very tasty!! {I forgot to take a photo of the finished dish... oops!}

Now to think of next week's Meal Plan... this week's went to pot as my oven broke! More on that tomorrow!

{stuff}

Is it just me or is the world moving way to fast?  There is always far too much to do and never enough hours in the day...  this week has been a blur!

You'll have heard (or be sick of hearing) that I've been under the weather, it's just been the cold / flu virus that everyone's had but it really drags you down... If I had the option of going to bed for a day or two to try and sleep it off it may not have lasted so long but that option just isn't there, not when you have a toddler!  So, after nearly 4 weeks of feeling yuk, I eventually went to the Dr as I was in some pain... I have a paraumbilical hernia from all the coughing and vomiting... great!  There is a chance I may need surgery to repair it.  I've to have some test this week and the decision will be made on the results.

On a happy note, I signed up to join #PostCircle  (<< click to find out more).  I'm so excited and can't wait to receive my first letter.  I am on Team Vole and there are 6 members... I sent my first letter out a few days ago and I created my own letter paper and envelope... I hope they withstood the journey!

I've managed to stick to my Meal Plan for this week so far and tonight's slow cooker ham with fried rice was very tasty indeed!  

Here's my method:

A ham joint... not an expensive one as slow cooking it makes it so tender... simply covered with water and slow cooked on low for 8 hours.

Rice... I use what I call the 'Riddock Rice' method (as my friends shared their method with me and it's FOOL PROOF)... to serve two I use half a cup of basmati rice and put this into a pot, add a pinch of salt and any herbs / spice you like (you don't have to, a pinch of salt can be enough), add a splash of oil (sunflower or olive oil) and stir until the grains of rice have some oil on.  Then add twice the amount of boiling water (so I'd use one cup of boiling water as I used half a cup of rice) and stir again.  Then pop the lid on the pot, put the gas onto a low peep and cook for 12mins (DO NOT STIR)... turn the heat off and leave to stand, with the pot lid still on, for another 12mins (DO NOT STIR DURING THIS TIME)... after the 24mins you can take the lid off and stir.... perfect rice!

Whilst the rice was resting I chopped up some onion, red pepper, green pepper and mushroom and gently cooked in some oil when the rice was ready I added that, plus some sweetcorn and some slow cooked ham, 2 tablespoons of soya sauce and cooked / stirred for a few minutes until all heated through...  Serve and enjoy!  I love this kind of dish as I can have some leftovers the next day for lunch (I love cold rice).



I'm really looking forward to my Pastry Ring on Saturday, it was so tasty last time I made it, fingers crossed it works out the same!

{Monday Meal Plan}

Can you believe I'm still under the weather?  Entering week 4 of cold and flu symptoms, off to the Dr this afternoon, hope he can prescribe a miracle cure!

It's a busy day again today (when's it not?) so I threw in the ingredients for Spag Bol into the slow cooker this morning before work... I've made double portions so I can use half for tomorrow... here's our plan:


Monday - spag bol in slow cooker
minced beef, onion, pepper, mushroom, passatta, mixed herbs, garlic and tomato puree, dash of worcester sauce.... cook for 8 hours on low.

Tuesday - pasta bake with garlic bread
left over bolognese sauce (from Monday) add in cooked pasta, some homemade cheese sauce (which I whisk up in 10mins), grated cheese on top and bake in oven for 20-30mins.

Wednesday - ham ham with stir fry rice (fries for those who don't want rice)

Thursday - we are out for dinner tonight so just the kids to eat at home, they've requested some piri piri chicken and fries that just cooks in the oven... simple

Friday - homemade chicken chow mein

Saturday - mediterranean pastry ring and salad

Sunday - homemade lentil soup and baguettes (not decided on the filling yet)

{Chilli}

I hadn't decided on today's meal as I had planned on a huge rush about to get to book club, but I hadn't even finished the book yet.... so that was that decided, no book club!

This morning before work I prepped some 'throw it all in chilli'....



Mince beef, garlic puree, tomato puree, onion, sweetcorn, red pepper, 500ml passata, few spoons of my veg pasta sauce (the leftovers), dash of worcester sauce, tin of baked beans, mixed dried herbs, sprinkle of chilli powder, 250ml water....stir and cook on low for 8 hours!

I was still in a rush to get home so I popped to the chip shop and picked up some chips and we had the chilli over the top with some grated cheese.... o.m.g it was lush!

Liven up limp veg!

I'm on the mend... I've had a cold / stomach flu for two weeks now, it's not been pleasant!  Meals have been quick and a lot of take outs but we've mostly stuck to our meal plan (I'll post my Meal Planning Monday post tomorrow).

Tonight I really wanted something tasty and nutritious. We had been away for the weekend to Wick so ate out a lot and I was dying for something homemade... We had around 10cm+ of snowfall today and the fridge was pretty bare... a limp courgette, a bendy leek, 4 wrinkly tomatoes, a handful of greying mushrooms and a bashed red pepper...fit for the food recycle bin or a tasty pasta sauce?

I prepped the veg and put in a roasting tray, a drizzle of olive oil a sprinkling of Schwartz mixed herbs, rosemary, chives, paprika and garlic granules and roasted for 30 mins.  When ready I popped them into a pot with a tub of passatta, pinch of pepper and simmered for a few mins. I then blitzed gently leaving a bit chunky and served with pasta!  Delicious and I've got two tubs for the freezer!

Mediterranean Veg Pastry Ring

Oh Yum!  The Mediterranean Veg Pastry Ring was a success, so good that we had it for dinner again tonight!  Here's my version (as I always adapt a recipe)...

Ingredients

1 courgette
1 pepper
1 aubergine
4 mushrooms
1 leek
handful of cherry tomatoes
olive oil
herbs and spices for seasoning
tin of croissant dough (you could use puff pastry)*
philadelphia with chives

Method

Prepare veg and put in oven tray, drizzle over some olive oil (just a little) and season (I used some dried mixed herbs and a sprinkling of mild chilli powder).  Roast for 20-30mins. (I prepared this part in the morning and just left veg to cool but you could use it straight away)

Open the tin of croissant dough (the tins are great, you twist to open them and the dough is precut into triangles )  Place each triangle on your baking tray (I used a pizza tray and covered with greaseproof paper) in a ring shape (it looks like a big sunshine... for now)...



You can whizz the roasted veg in a food processor with the philadelphia or just chop it all up and mix with the philadelphia, then spoon it into the ring....


Then just fold over the ends of the triangle and tuck in... bake at 180 degrees (fan oven) for 12 mins and that's it!  It's so very tasty and would work with so many different fillings!  


We served ours with herb rice and salad (dressed with oil and balsamic)


Give it a go, you won't regret it!

*if you can't find croissant dough (as I had to visit a few supermarkets to find it) you can use puff pastry, just roll it out so it's about 1-2cm thick and cut into triangle shapes (look at the photo above for an idea of the shape)... I think puff pastry would take a bit longer to cook, so keep and eye on it until it's golden in colour.

Chilly Chilli

I've been saying all night 'it's chilly' so it reminded me that I hadn't posted my 'Chilli' slow cooker recipe that a few of you have asked for... sorry!  Here it is:

Brown the mince

In the slow cooker add:

1 chopped onion,
1 pepper (optional),
2 stalks of celery (optional),
500ml carton of passatta,
tin of (drained) kidney beans,
pinch of salt,
1 teaspoon of garlic puree,
1 tablespoon of tomato puree,
1 tablespoon of dried basil,
1 teaspoon of chilli powder,
pinch of dried chilli flakes (optional),

Stir and add mince and cooked on medium for 6 hours (or low for 8 hours or high for 4 hours)

That's it.. nothing fancy - just basic ingredients from the store cupboard.  You can add more chilli if you like it with more of a kick or add fresh chilli - I keep it mild as baby loves chilli!

I serve one of two ways:

1) with boiled rice (Riddock Rice as we now call it... it's the perfect fool proof technique, if you want to know just let me know) and a spoonful of natural yoghurt

2) over homemade potato wedges and grated cheese on top

Slow cooking and coffee

The slow cooker has been dusted off this week and we've used it twice.... yes twice!


On Monday we had chicken curry, I used the Slow Cooker range from Schwartz.  I'd never used this product before.  It was really quick and easy to prepare, which is what you want when you're a busy working Mom.  Even before the meal started cooking it smelt amazing!  Throughout the whole day the fragrant aroma of dinner cooking was making my mouth water.  I cooked this for 6 hours on medium and served with boiled rice and chapatis.  There wasn't much sauce but the meal was tasty, not too spicy at all, just a nice mellow curry which was perfect for an evening meal.  I added some natural yoghurt to my dish, not to cool it but just because I love yoghurt with my curry!

Tonight we had beef stew, this was another Schwartz product from the Slow Cooker range, it is beef and ale stew but as baby was having some too, I didn't add the ale.  There wasn't much smell before the meal cooked and throughout the day there was only the hint of aroma.  I cooked this for 6 hours on medium then I turned it down to low as not everyone would be home at the same time for tea (this is why a slow cooker meal on these nights is just perfect!).  The meal was delicious, maybe too much water / juice this time.. but next time I cook this (as there will be a next time) I will add less than the recommended 750ml of liquid (water and ale, although I just added 600ml of liquid).  Everyone enjoyed this meal, I served it with mash and puff pastry.

Gingerbread... to ice or not to ice?

My gingerbread has to be iced!  I've known some to butter their slice and some eat it plain but I LOVE it iced!  By request here is the recipe... I think I'll make this next week for Halloween, I have some orange and black food colouring and I have a snazzy ice idea using those colours, plus it's yummy!


225g plain flour
pinch of salt
2 teaspoons of ground ginger
1 teaspoon of mixed spice
1 teaspoon of bicarbe of soda
50g of brown sugar (I use demerara) 
100g butter or margarine
175g black treacle
50g golden syrup
150ml milk
2 eggs

Put all the dry ingredients into the blender and blend until combined.  

In a pan melt the butter, treacle, syrup gently and slowly beat in the milk until combined and then set aside to cool.  Add the eggs once the mix is cool and beat until combined.  Then add into the blender and blend until all combined.  Pour into tray and cook for around 40 - 45 mins (until it's firm on top and a skewer put in the middle comes out clean).

Once cool you can ice and then it's best left for one whole day (if you can wait that long... I usually make it at night and don't eat any until the next day)... then cut into squares.

Apple Spice Drizzle Ice.... muffins

Can you tell I came up with the name whilst the Rhyme Rocket was on TV?

You may already know (from Twitter or my Facebook page) that we're having a storecupboard / freezer week... we've got so much in there and we want to do a Costco shop at the weekend and we've nowhere to store the new things... so meals and treats are being made from what's at home.

I bought a huge bag of apples last week and I had already used some to make Apple and Pear Crumble at the weekend so I wanted something different... quite fancied a toffee and apple cake but I had made a big cake the other day (if you want that recipe just holler, it was amazing... Devil's Food Cake)... so muffins it was... here they are and here is the recipe:


350g self raising flour
160g caster sugar

1/2 teaspoon of salt
1/2 teaspoon baking powder
1/2 teaspoon of bicarbe of soda
2 teaspoons of cinnamon
1/2 teaspoon of mixed spice

375ml milk
2 tablespoons of lemon juice

1 egg
2 tablespoons of golden syrup

70g butter
500g of apples
brown sugar

Put the flour, powders, salt, spice and caster sugar into blender (I always use a blender for all my cakes, and I never bother sifting anything!) and blend till all combined

Add the lemon juice into the milk and leave aside for 5mins

Skin and chop the apples add these to the butter (which you're now melting in a pan), sprinkle over some brown sugar and cook these for about 5mins (whilst the milk and lemon juice are resting)

Add the egg and golden syrup into the milk mixture and beat with fork until combined.  Slowly add this into the dry ingredients in the blender, blending slowing until all combined.  Then add the apple / butter mixture and blend till all combined.

Spoon into muffin cases and sprinkle with brown sugar before baking at 170 degrees for around 25 -35 mins (until golden brown).... job done!

Oh... drizzle with plain icing if you like :)  This recipe made 24 small muffins or it would make 12 big muffins.

Cinnamon and Raisin Pasties


I love these and I don't make them often enough!  They are so simple, trust me!

What you need:  
A regular packet of puff pastry (yes the packet you'd have with your stew and tatties)
A big spoonful of apricot jam
A small spoon of cinnamon
Raisins (optional)
Icing

What you do:
Roll out the puff pastry until it's a big rectangle, it should be about 3mm - 5mm thick (if you want to be technical)
Mix the jam and cinnamon together... if it's thick then heat it in the microwave for a few seconds till it's easier to spread... then spread all over the rectangle of puff pastry
Sprinkle over the raisins (if using)
Now cut the pastry into long strips and roll up... place each on flat onto a baking tray (line your tray with greaseproof paper).
Spread any leftover jam over the tops before baking
Bake till golden brown (around 10mins)
Once cool drizzle thin icing over the top then MUNCH!

Dairylea-sagne

I've been so busy lately that I've not had time to make a homemade meal but today I finished work at 12.30pm and I am off for 18 days (yipee).. so my first stop on way home was to Asda for shopping as the fridge was bare!

I planned on making spaghetti bolognese, which I did but then I spotted lasange sheets in the cupboard and I just had to make lasagne!  I always make my own red and white sauce and sometimes the white sauce can be quite bland when I make it quickly (without the onion and nutmeg), so I had a brain wave and added some Dairylea triangles!

I'm currently trying Dairylea as I'm a BzzAgent and Dairylea have a new recipe, which is so creamy!  I added two triangles to my white sauce and it made it a great thick consistency and it was tasty without the need to add heaps of cheese, I only had to add a tablespoon of Red Leicester along with the triangles and the sauce was perfect!

The lasagne was a great hit and baby loved it too!!  I'll definitely be making it again soon and Dairylea will now be added each time!
